BBQ Sea Bass with Vegetables

BBQ Sea Bass with Vegetables

Serves 2 - 3   about 20 min.

Ingredients:

  • 1 lb. Sea Bass fillet, no skin

  • Olive oil

  • 1/2 large green bell pepper, chopped

  • 1/2 large red bell pepper, chopped

  • 1/2 small red onion, chopped

  • 2 large garlic cloves, minced

  • 1/2 cup pitted Kalamata olives, halved

  • 1 lemon

Spice Mixture

  • 1 1/2 tsp ground coriander

  • 1 1/2 tsp garlic powder

  • 1 1/2 tsp sweet paprika

  • 1 tsp ground cumin

  • 1/2 tsp black pepper

Instructions:

  1. Start the BBQ.

  2. Season the sea bass on all sides with kosher salt. Set aside.

  3. In a small bowl, combine the spices. Set the spice mix aside.

  4. Heat some olive oil over medium high heat until shimmering.

  5. Add the bell peppers and onion. Season with salt and 1 or 2 tsp of the spice mixture.

  6. Cook for about 5 minutes, until softened. Add the garlic and continue to cook for a minute or so.

  7. Turn the heat to low, and stir in the olives. Leave on low heat while you cook the fish.

  8. Pat the fish very dry and rub all over with the remaining spice mixture.

  9. Oil the grill well and BBQ the fish, flipping and oiling the grill again halfway through.  Careful not to overcook!

  10. Remove the fish from the grill and squeeze the juice of 1/2 lemon over it.

  11. To serve, spoon the vegetables on top.
