Kitty Gordon’s tasty fish!

Preheat oven to 350.

Pat fish dry. Rub all over with olive oil and season with salt and pepper. Let sit at room temperature for 10-15 minutes. Heat an oven-safe skillet (I prefer carbon steel) on medium. 

For fillets 1/2" or less: Sear in skillet 1 minute. Flip. Transfer to oven and bake for 3 minutes.

For thicker fillets: Sear 2-3 minutes, flip, bake for 5 minutes.
