1 lb True Cod
3 tablespoons extra virgin olive oil
Salt & pepper, to taste
1.5 teaspoon of chopped fresh herbs (I used rosemary and thyme)
1 minced garlic clove
1/2 teaspoon salt or garlic salt
2 slices fresh bread
1 egg, scrambled in a bowl
Lemon wedges for serving
Pour yourself something to drink and put on some good tunes.
Rinse and pat your fish dry with a paper towel. Salt and pepper your fillets.
In a food processor, buzz the bread, herbs and garlic salt (or fresh garlic and regular salt)
Scramble one egg in a bowl add a little salt, put the breadcrumbs in another bowl
Heat your pan on medium-high, add 3 tablespoons olive oil
When the pan is really hot, dredge your fillet through the egg, then the breadcrumbs (coat fully), and place in the hot pan.
Cook about 3 minutes on each side until they're golden, depending on thickness you may need to cook longer.
Kiss the chef, and serve!
