Mike Chin's Convict Chowder (subscriber recipe!)

Here is a great and easy recipe for rockfish from our friend and Sea Forager Seafood enthusiast Mike Chin.

 

"We made a nice chowder out of the barber poles, the flesh had a nice resiliency."

 

Ingredients:

  • 1 lb rockfish

  • 3 slices bacon

  • 1 onion, chopped

  • 2 large potatoes, cubed

  • 2 carrots, sliced

  • 1 can tomatoes

  • white wine, for the soup and the chef

  • salt & pepper, chili powder, fish sauce and worcester sauce, to taste

  • dollop of mascarpone

 

  1. render bacon

  2. brown onions

  3. sautee cubed potatoes, carrots until just tender

  4. dump in a can of tomatoes

  5. season with wine, S&P, chili powder, Worcester sauce, fish sauce

  6. turn off heat, dump in cubed fish for 10-min or so

  7. stir in dollop of mascarpone
