Here is a great and easy recipe for rockfish from our friend and Sea Forager Seafood enthusiast Mike Chin.
"We made a nice chowder out of the barber poles, the flesh had a nice resiliency."
1 lb rockfish
3 slices bacon
1 onion, chopped
2 large potatoes, cubed
2 carrots, sliced
1 can tomatoes
white wine, for the soup and the chef
salt & pepper, chili powder, fish sauce and worcester sauce, to taste
dollop of mascarpone
sautee cubed potatoes, carrots until just tender
dump in a can of tomatoes
season with wine, S&P, chili powder, Worcester sauce, fish sauce
turn off heat, dump in cubed fish for 10-min or so
stir in dollop of mascarpone
