Fresh calamari! What a treat. Just prep and fry as our CSF member Michael Gross did here. But first you have to clean it! See the video HERE.
2lbs squid, cleaned
1/2 cup of all purpose flour
1/2 cup cornstarch
½ tsp of salt
¼ tsp pepper
¼ tsp paprika
Vegetable oil for frying (more or less depending on whether you deep or shallow fry, I prefer to shallow fry.)
Sriracha DIPPING SAUCE - great for battered calamari
For the dipping sauce - stir together in a small bowl:
1/4 cup yogurt
1/4 cup mayonaise
juice of 1/2 lemon or lime
splurt of sriracha (Vietnamese hot sauce, but you knew that)
1/4 tsp cumin
Nothing fancy going on here. Dredge the calamari in a 50/50 blend of flour and cornstarch, with salt, freshly ground black pepper, and paprika. Deep fry to perfection, and pair with lemon wedges and the dipping sauce. Cheers!
